Hybrid Blend

HYBRID OAK INFUSION SPIRALS by The Barrel Mill give winemakers premium French oak and premium American oak together in one barrel set, or pack, calibrated to treat 59 to 70-gallons. For wine aging in neutral barrels the Hybrid Spiral releases fresh, new-barrel, toasted oak aroma and flavor through its patented, spiral-cut design. Virtually all aromas and flavors of the Hybrid Oak Spiral are fully extracted in six weeks rather than eight to 12 months typically to extract from a new hybrid oak barrel -- but at a small fraction of the price.

Rhone Blend

For Syrah, Zinfandel and Other Robust Reds, Rhône Blend Infusion Spiral barrel packs replicate a barrel toasting gradient using a mix of three different toasts. With a combination of medium, medium plus and heavy toasts, Rhône Blend Barrel Packs create a muscular oak alternative that complements hearty varietals and contributes a significant, yet balanced, component of premium French oak. Big Roast Blend

Using a process similar to what The Barrel Mill applies in whisky barrel production, each Big Roast Blend Barrel Pack contains up to three spirals in the pack that are flame-finished after convection oven toasting to create a charred top layer over a medium-toasted core. The char layer contributes a charcoal note on the nose and palate that can complement some lush, dark red wines.

The Big Roast Blend is an American oak multiple-toast blend available in three levels of intensity of dark roasted impact, from mild (#1) to strong (#3).

Toasted to Perfection

Single Toast or Multiple Toast Blends Deliver True Barrel-Like Quality

The Infusion Spiral system is the reliable oak alternative for simple and fast extraction of toasted oak aroma and flavor compounds that deliver refined, integrated results eight times faster than, and at a small fraction of the price of, a new barrel. Light Toast

Made using the coolest oven temperature of our four single-toast choices, Light Toast contributes noticeable structure with its high tannin content while highlighting natural flavors in your beverage. Light Toast is also good for reducing vegetal character in wine. French oak will provide a milder aroma and flavor impact than American oak, and more tannin. Light Toast American Oak will give a noticeable coconut contribution.

Medium Toast

A mid-level temperature that showcases the natural vanillin compound in oak, Medium Toast offers a sweet bouquet with warm vanilla overtones. French oak will provide a milder aroma and flavor impact than American oak, and more tannin.

Medium Plus Toast

Increased oven temperature begins to develop some caramelized sugars that contribute aromas of honey and roasted nuts with a hint of coffee and spice. Notes of mocha and chocolate are noticeable on the palate. French oak will provide a milder aroma and flavor impact than American oak, and more tannin.

Infusion Story

Many winemakers will say that great wine is really made in the vineyard. Their job is simple: do no harm and let the grapes work their wonder. But the winemaker’s role deserves more credit than just serving as a sort of chaperone for the grapes. Decisions are made almost daily along the wine processing continuum and it is the winemaker who navigates the journey that leads to greatness.

Throughout this ongoing winemaking activity, the possible application of oak arises almost any time. From fermentation to just weeks before bottling, this abundant resource with properties naturally created for winemaking is applied in all kinds of formats to perform one or more critical functions. Whether to build, enhance, support, sweeten, lengthen, lift, mask, improve, complement, round-out or add structure, oak is second only to grapes in the hierarchy of components that directly impact the winemaker’s final product.

Understanding the role of oak in the winemaking function was--and still is--the inspiration for the design, manufacture, assembly and packaging of the Infusion Spiral system by The Barrel Mill. We believe that in addition to contributing aroma and flavor, an oak adjunct must offer convenience, simplicity, refinement and unquestionable value in a neat, clean, quality-controlled package.
