What sets apart good coffee from great coffee?

The key is in the roasting process. Javesca Coffee beans are ethically sourced from the best coffee regions in the world. Our expert roasters put the beans through a specialized 3-stage treatment in our state-of-the-art facilities in South Charlotte.

Drying

Coffee beans contain 10-12% moisture upon arriving at our facility and are put through the first stage of roasting, the drying process, to make sure the green coffee beans are evenly heated allowing for uniform taste and development.

Browning

This stage of the roasting process involves putting high energy and heat into the now dried coffee, caramelizing the sugars, and breaking down the chemical bonds. This develops many different aromas and flavor compounds within the beans. At the end of the browning stage, the beans begin to pop from a build up of water vapor inside the bean, resulting in what many roasters call “first-crack.”

Development‌‌

The coffee begins to release the energy it has been storing up during the first two stages. We roast many coffees light or just after first crack allowing for the unique aromas from the coffees to shine through when brewed. We often extend or slow down this stage of the roast to allow for a specific roast or flavor profile to be achieved for each individual coffee.

What’s the difference between Light and Dark Roast (and everything in between)?

To put it simply, the lighter the roast, the more the flavor and aroma reflect the essence of the original bean. A darker roast embodies the flavor profile of a longer roasting process.
